MEYER LEMON YOGURT PARFAIT

There are two things I look forward to in particular when winter arrives, blood oranges and meyer lemons. Highly suggest that you take advantage of the short season. Meyer lemons have a lovely tangy sweetness in comparison to regular lemons. Their rind is more supple and has a tinge of orange that yields a wonderful bright zest. There is very little pith, the white bitter part between the rind and the fruity flesh which makes it a perfect candidate for candying. You'll love experimenting with these beauties in sweet and savory foods or even cocktails.

This lemony parfait was created after my friends Peter and Scott brought back some meyer lemons they had picked on a recent trip to San Diego. Lucky me! The mild tart flavor pairs so beautifully with the sweetness of the mangos. I actually meant to add blood orange segments but forgot and ended up adding segments of meyer lemon, I love a happy accident, don't you? Hope you'll try variations on this with all your favorite winter citrus fruits such a blood oranges or pomelos. This was so good I'm thinking about skipping the granola and serving this for dessert. Maybe with the addition of candied meyer lemon wheels for some crunch. A recipe for another time....

INGREDIENTS

2 cups plain greek yogurt

1 meyer lemon

1 tbsp meyer lemon zest

1 mango, chopped into 1/4" dice

1/4 cup granola

mint sprigs for garnish

Maldon sea salt

DIRECTIONS

  1. Zest the meyer lemon with a microplane grater and set aside. Using a sharp knife, cut off the top and bottom of the lemon until you just barely see the flesh. Then remove the citrus peel on all sides careful to remove all the white pith so you see only the flesh. Working over a small mixing bowl, cut in between each membrane to cut out each citrus section to create lemon segments. Squeeze the remaining membrane and squeeze the lemon juice into the bowl.

  2. In a small mixing bowl, add yogurt, 1 tbsp lemon juice, 1 tbsp lemon zest. Stir together until well blended.

  3. In 2 small bowls, layer meyer lemon yogurt, mango, granola, meyer lemon segments and repeat.

  4. Garnish with mint and remaining lemon zest. Sprinkle a pinch of Maldon sea salt.
